“Radiation and Health”

Our human genetic code, which has developed over hundreds of thousands of years, is very susceptible to mutation when exposed to ionizing radiation such as from nuclear fallout, radioactive waste, and medical X-rays. Somehow we have become desensitized to these dangers over the past 60 years, and as a result cancer and heart disease are much more prevalent. This talk will describe the risks and how to avoid them.

Dr. Harvey Kaltsas is an Acupuncture Physician with 33 years experience and author of the book X-rayed to Death. He was formerly President of the American Association of Acupuncture and Oriental Medicine and Chair of the Florida Board of Acupuncture.

I have a Master's Degree in Adult education, am Myers-Briggs Type Indicator (MBTI) qualified, and am a Certified Professional Coach through Coaches Institute Inernational.

"Healing Your Relationship with Food"

Eating is one of the most intimate interactions we have with the earth. It can also be one of the most pleasant experiences we engage in. Unlike some pleasures, enjoying meals at regular intervals is is also essential for health. Nonetheless, many people seen to have a love/hate relationship with food, or try to negate its importance. Embracing the sacredness of food through mindful preparation and eating in one of the first steps anyone can take to improve their health and quality of life. Vicki will demonstrate some easy, and delicious vegan recipes to encourage and inspire you to take control of your health by embracing home food preparation.

About Vicki

Vicki Chelf lives in a yellow 1950's house with solar panels and salvaged furniture in Sarasota, Florida. She grows tropical fruits, herbs and vegetables on every inch of her suburban lot. She is the host of both The Green Connection US radio and of television shows as well as the co-host of "Truly Sustainable Sarasota" on WSLR 96.5 fm.

Vicki has written vegetarian cookbooks and taught vegetarian cooking for 30 years. Her books include Cooking with the Right Side of the Brain, The Arrowhead Mills Cookbook, and For the Love of Garlic. She is co-author of Cooking for Life with Cherie Calbom. In addition to these titles, she has written six cookbooks that have been published in French.

Vicki is a graduate of the Ringling School of Art and Design with a degree in fine art. She has had one person shows of her paintings in France, the U.S. and in Canada. Vicki also holds a Bachelors of Science in holistic nutrition from Clayton College.
